PLAYING CATCH UP

Sorry, I know I am a bit behind but I have been having some computer issues. I am lost with out my computer. I will do my best to get you up to date.
Last I was here I was recovering from overeating the Caramel Apple Pancakes. I found that they keep well overnight in the fridge and heat up great in the microwave for breakfast. I am going to see how they freeze next time I make them if my family leaves any leftovers for me to freeze.

8-28 FRIDAY
We had fried chicken livers. These are on my top 10 list of comfort foods. I think I could eat them several times a week.
The one think that my friends have learned is that they make a great finger food with a blue cheese dip when we have a nascar or football get together.

8-29 Saturday
Nothing special just hamburgers. No special recipe but what makes them good is I have made a sauce that almost matches the Big Mac sauce.

8-30 Sunday
The family went to Red Lobster for my husbands birthday dinner. Biscuits and gravy this southern blooded gal can do, southern fried fish but not the fancy seafood that my husband likes. I am still trying and learning and making my share of mistakes but one day I will be able to make the stuffed flounder and other dishes he likes.

8-31 Monday
Today is actually my husbands birthday it was just easier to go out on the weekend.
He didn't want a cake this year, He usually wants the Peanut Butter Pie Cheesecake.This year he wanted me to make him Chocolate Zucchini Blueberry bread. It's more cake like. I must say that this is becoming one of my favorites as well.
I don't know what it is about this bread but after it sits it is so much better the second day. This is a very moist and heavy bread.

9-1 Tuesday
Not 100 % today and in the mood for the kind of home made chicken noodles like my grandmother used to make.
Guess whats for dinner?
You got it home made chicken noodles almost like she would make.

9-2 Wednesday
Those chicken noodles are just as good the second day as they were the first.
With these cooler days and colder nights, a bowl of these noodles are like one of her warm afghans wrapped around me giving me a hug.
Today I could have used one of her hugs and found my self missing her so much after all these years.

SHE TURNED 31 TODAY

AUGUST 26th
Today my oldest turns 31 years old. I didn't get to see her as she lives so far away so I had to settle for a phone call.
It's funny when she was little there was a mix up on her birthday and for several years we celebrated it in the 25th. That has become a big joke now. I laughed at her when I called her because she says "I am getting old", goodness she is only 31. Wait till she is my age and has all the aches and pains.

Tonight we had breakfast for dinner. Caramel Apple Pancakes. Yum!
Shredded apple in a pancake don't sound that bad but who would have thought that regular warmed up caramel ice cream topping would be good on a pancake? Well, I did and it was delicious! Something you should try.

CORN GONE BAD

TUESDAY AUGUST 25TH
Alright I know some of dated don't match but I am trying to keep up.

I went down to the basement to get something out of the freezer for dinner and happened to take a look at the canning I did this year and to my surprise all the button lids on the corn I canned had popped up. Every thing else looked fine. but what happened to my corn? I did everything like I always did and everything else looks list fine. The only thing I could think of was beside "all that corns gone bad" was maybe I got a bad box of flat lids. I wanted to cry. I bet next year I freeze it.

So I got some bacon out of the freezer, I had to dig it out from under about 40 bags of frozen zucchini. I made fried cabbage with onions and bacon. Another one of Todd's favorites. I don't have to fix anything else with it but this time I found a bag of shredded hash brown potatoes while digging in the freezer so I threw them in there and he loved it.
This dish has no real name so he calls it Loaded Fried Cabbage.

CHIPOLTE'S REVIEW

MONDAY AUGUST 24th
This past Saturday we went to Chipoltes to eat an early dinner. We were there at 5:22 and seen 5 employees.
I was so happy the hear that this place was coming to town that I was read to jump up and down. I gave it a couple of weeks before going and I just fell in love with going there. I know with going out to eat that there will always be problems and it wont be like eating in my kitchen but why can't this small place get it right? How many months has it been now?
First let me say the food was very good as it always is.
The place was clean, there was one dirty table top for this time of day. The counter attendants were friendly and clean looking (not like Wal Mart) and the ones I could see all had their hair pulled back and everyone had on plastic gloves.

On the down side of things.
The music was to loud that I couldn't even hear the counter attendant and had to keep asking her to repeat herself. We couldn't even hear the conversation at our table.
The serving size keeps getting smaller and the once free Guacamole topping I am now charged for. Depending on who is behind the counter if you ask you might get a bigger spoonful of rice or a bit more of the beans.
I get the same thing every time I am there, a Chicken Bowl. This happens to be my Favorite.
Every time I am there I have to return to the counter to ask for a spoon. I know they have them , they just don't or wont keep them out front. I don't know the reason but I have to still ask for one. I have seen this before. Why not just put them out front where people can get to them? They have knives and forks, why not spoons?
This experience will not stop me from returning to Chipoltes to grab my favorite Chicken burrito bowl from tome to time.

MONDAY AUGUST 25th

Nothing big around here today I just made a simple vegetable stir fry. Years ago I would have never thought have putting a meal on the table with out a big chunk of meat. It took some work but now Todd is just fine with out meat and potatoes every day. He has become fond of stir fry with out meat.

SUNDAY AUGUST 23rd

No big family Sunday dinner, everyone is on vacation. So it was just the 3 of us. It has become tradition to have Sunday dinner here as my Grandmother is not able and my mother and mother in law don't do it. We usually have about 9 at Sunday dinner.
My guys wanted sticky chicken, home made mac 'n cheese and a salad. This was not a problem as I love to make this chicken. Smart me I made enough for Mondays dinner as well. So all I have to do is make something to go with the chicken.

Saturday August 22nd

I am not a fan of fast food but tonight we went out for dinner. I will review our experience here later.

I am in need of something chocolate, anything chocolate. I need it now!
At this hour I will have to settle for baking something tomorrow. That would probably be best so that I don't over indulge tonight. Todd said he wants me to make Chocolate Zucchini Blueberry Bread. It is something that has to be eaten to be appreciated. It is very good. I never have any left to freeze out of 3 loafs.

FRIDAY AUGUST 21st

It's probably a good thing this is a food blog. After the day I had I could write a whole page or more and it wouldn't have anything to do with food.
So after the day I had I wanted to do something very simple for dinner.
I made buttered spaghetti with Sicilian Blend season ans threw in some black olives, pickled banana peppers and topped it with some Parmesan cheese. Another one of those dishes that I don't have a recipe for and can be made a hundred different ways.
I will post about this dish in the Pasta & Rice section of my recipes.

Tonight we had fish tacos for dinner. This is something I have only come to love in the last few months. They are simple and my family just love them to.
There are so many options when making these, I can't go wrong and I am ably to please everyone.

WEDNESDAY AUGUST 19th

Yesterday I was in bed most of the day sick. I woke up about 2 am with a migraine that was off the charts. I would have been better off if I would have had a hang over, I remember those form years ago and I could manage those. For a migraine there is nothing I can do but wait it out and let it pass.
I couldn't concentrate to work on the site so I finally tried to lay down for a nap and just as I thought I could fall asleep the demolition started on the neighbors sidewalk. The jack hammering sounded like it was in our basement. My neighbors of more than 17 years, I love them like family and I know it wasn't their fault. But of all days for this to go on. It was the worst for me.
Todd's parents are getting ready to go on a short vacation so they were coming over for dinner and Todd wanted Sloppy Joes. I love making home made Joes. I can control how much of what I put in them. Some time I am in the mood for more onion, some times I want them more sweet, some times I want them a bit more spicy. I think you get the point. My Joes also make a great hot dog sauce and I will catch Todd using it as a chip dip. When we have family get togethers here I have had special request for my Sloppy Joes. My sweet mother taught me how to make them and her Joes were just as popular as mine are now. This year my son has learned to appreciate them and started to eat them.
